Happy Sunday, everyone! I’m not a fancy photographer, but I did a bang up job with this dinner. It’s simple, took a few minutes to prep and was delightful.
1 – 3# organic, pastured young chicken
1 bag of organic cauliflower rice
a few sprigs of organic cilantro
1 tbs organic olive oil
seasoning – sprinkle onto the chicken – sea salt, garlic salt, onion powder, a tiny bit of dried rosemary.
Preheat the oven to 350 degrees. Rub the chicken down with the olive oil, then sprinkle on the seasoning. Bake for 90 minutes.
While there is 10 minutes left on the chicken, get a pan to cook the cauliflower rice. Add a few tablespoons of water into the pan on medium heat. Add the frozen cauliflower and break down and stir with a wooden spoon until the cauliflower is cooked through – roughly 8-10 minutes.
Add the cilantro as a garnish, and know that it has so many fabulous health and healing qualities – so eat it too!
This meal cost approximately $15 and served two adults with enough chicken left over for another full meal for 2 adults.
Serving suggestion – toss up a mixed green salad with olive oil, garlic and lemon as a dressing too!
